Jerk is a form of cooking native to Jamaica, during which meat is dry-rubbed or wet marinated with a hot spice mixture referred to as Jamaican jerk spice.

Some historians believe it had been originally developed by African slaves who escaped into the wilds of Jamaica when Brits captured the island from Spain in 1655. Adapting to their new surroundings, the former slaves created use of the natural food sources accessible to them, making the spicy sauce and slowly cooking the meat over a smoking wood fire. Some other historians argue the case for the practice of jerking originating with the Amerindians in Jamaica from the Arawak and Taino tribes who blended with the Maroons.

The smoky flavor of the meat is achieved using various different cooking methods, as well as the use of contemporary wood-burning ovens. The meat is generally, but not limited to, chicken or pork, and also the main ingredients of the spicy jerk marinade sauce are allspice and Scotch bonnet peppers. Jerk cooking is widespread in Caribbean/West Indian communities throughout North America and Western Europe.

Jerk Chicken

What you need:

  • 2 Lbs Chicken ( 2 thighs, 2 legs, 2 wings)
  • Juice of an Orange
  • Juice of ½  a Lime
  • 2 Scallion stalks
  • 5 Garlic Cloves
  • ½ Tsp  Black pepper
  • 4 Sprigs Fresh Thyme
  • 2 Tbsp Browning
  • 2 Tbsp Kosher Salt
  • 1 Scotch Bonnet or 1 Tsp of Habanero Salt (Available at www.flavornoire.com)
  • 1 Tbsp  Soy Sauce ( 2 Packets)
  • 3 Tbsp Organic Jerk Seasoning

How to Prepare Jerk Marinade  

Step 1:  In a blender or food Processor add Browning, Soy Sauce, juice of an orange,  juice of half a lime, Scallion Stalks, Garlic Cloves, Thyme Leaves, and Flavor Noire Organic Jerk Seasoning. Blend until smooth and set aside.

How to Prepare Jerk Chicken

Step 1:  Season chicken with salt and Pepper on all sides. Then add jerk marinade, message marinade and let marinate for 30min ( Best flavor if left to marinate overnight in the refrigerator).  

How to Cook Jerk Chicken

Step 1:  Preheat oven to 375 F

Step 2: On a baking sheet lined with aluminum foil and parchment paper place chicken pieces 1 inch apart and cover with aluminum foil sealing all edges.

Step 3: Place chicken in oven and cook for 40 Minutes. Remove foil cover and cook for an additional 20 minutes. Make sure the internal temperature of the thickest piece of chicken is above 165 F.

Alternative Cooking Method:  Grilled on an outdoor BBQ
