

Jamaican Rice and Peas

Peas in the Caribbean is actually delicious beans. This traditional Jamaican rice and peas recipe is easy to make and delicious, to say the least.

How to Cook Beans
1In a medium pot, add 4 Cups of water and bring to a boil, add beans, reduce heat to a simmer, and cook for 40- 50 minutes or until tender.
2Once cooked drain beans and save remaining bean broth. ( you will need the bean broth to cook the rice and give it a beautiful reddish brown color.)
How to Prepare Rice & Beans
1In a medium pot with Lid, over medium heat add oil, once the oil is hot add scallions, garlic, thyme sprigs, and saute for 30-40 seconds. Make sure not to burn garlic or scallions.
2Then add beans, salt, black pepper, and 3 ½ Cups of Liquid ( Bean Broth and water to make 3 ½ c of liquid) bring to a boil.
3Add rice, gently stir, and bring back to boil. Cook for 5 mins, then cover with lid reduce heat to low, and cook for 25- 30 mins.
4Remove Lid, fluff rice with a fork and serve.
SERVE with Jerk Chicken or Jamaican Oxtail
