Who doesn’t love a tasty chicken dish? I think chicken is one of those proteins that just about everyone can gather around and do something with it that will please the masses. This month we are featuring the wonderful country of Mexico so we felt it would be proper to do a Mexican Seasoned Chicken dish! Don’t worry it’s not too spicy and it is packed with lots of flavors!
What you will need for ingredients:
- 4 Chicken Thighs or 2 Lbs. of Chicken
- 2 Tbsp Flavor Noire Mexican Mole Seasoning
- 1 Lime
- 2 Tsp Kosher Salt
- ¼ Cup Olive Oil

- Parchment Paper
- Aluminum Foil
- Medium Bowl

Follow these steps to make the perfect Mexican seasoned chicken dinner for all of your friends and family.
1. In a Medium bowl Marinate chicken with lime juice, Mexican mole seasoning, oil, and salt. Let Marinate for 15 mins or overnight in the fridge.
The longer you let the chicken marinade the better. Just think of it this way, flavor always gets better with time. (Foodie Hack: If you have a food saver machine put the chicken and marinade in a gallon sized bag and carefully suck all of the air out of the bag. This will help infuse the marinade into the meat much faster. Leave in the fridge for one hour and you will have some tasty chicken!)
2. Place chicken on a parchment paper lined sheet pan, cover with aluminum foil and bake for 25 mins.
Using parchment paper will ensure that the chick doesn’t burn or stick to anything while being cooked to perfection.

3. Remove foil from chicken and bake for an additional 25 mins until the skin is crispy and browned.
We all know that browning food adds a layer of flavor that cannot be replaced with any seasoning out there. Just make sure you watch it closely as even oven’s temp fluctuates a bit.

Remove foil to get a nice browning going on.
